Simple and Money-Saving Seafood Dishes

Tasty seafood meals don’t have to take a long time to fix, or a lot of money to prepare. Although some of these dishes are so good, your family will think you slaved over the stove all day and went over-budget, if you don’t tell them the truth.

Simplest-Ever Oyster Stew

1 pint stewing oysters
1 can cream of celery soup
1 cup milk
black pepper
seafood seasoning
parsley flakes

In soup pot blend and heat soup and milk, uncovered, keeping it below the boiling point. In a separate saucepan cook the oysters (unwashed) in their juice until the edges of the oysters curl. Add the oysters and liquid by spoonfuls into the soup pan. Add black pepper, seafood seasoning, and parsley to taste. Serve hot with oyster crackers. Serves 4.

Easy Oven-Fried Sea Trout

1 lb speckled or gray trout fillets
1 tablespoon butter
¾ cup milk
seasoned bread crumbs

You can use pre-seasoned bread crumbs or season them yourself with your favorite spices. Preheat oven to 350 degrees. Melt butter and add to milk, stir, and pur over fillets in a bowl, making sure fillets are coated and wet. Roll the wet fillets in the bread crumbs until coated well. Line an oven pan with aluminum foil and place fillets on it. Bake 15 minutes. If you want, you can add shredded cheese over the fillets 5 minutes before they are done. Serves 2-3.

Baked Sheepshead and Veggies

1 lb sheepshead (or black drum) fillets
2 each– medium potatoes, carrots, onions, tomatoes
1 small bell pepper
olive oil
spray butter
wild rice (prepared according to box)

Preheat oven to 350. Cut black drum fillets into bite-sized cubes. Slice potatoes, carrots, onions, bell peppers, and tomatoes VERY thin. Lay a sheet of aluminum foil on a baking pan and grease it with olive oil. Place veggies on top of greased foil. Spray a little butter over the top of them. Place another sheet of foil over the top and bake veggies 20 minutes. Add fish and bake another 12 minutes. Serve over wild rice.

Simple Shrimp Casserole

1 lb shrimp (cooked)
1 can mushroom soup
2 hard boiled eggs, diced
½ cup bread crumbs
¼ lb sharp cheddar cheese, shredded
few dashes Worcestershire sauce
salt and pepper

Cut shrimp into halves. Combine shrimp, soup, eggs, salt and pepper, and Worcestershire sauce and place in a casserole dish. Top with bread crumbs and cheese, brown in oven. Serves 4-5.

Easy Clam Chowder for Ten

3 slices of bacon
1 medium onion, chopped
1 can minced clams (or more if you have them)
2 cans condensed clam chowder
2 cans cream of potato soup
1 ½ cups milk
½ cup chicken broth
2 tablespoons seafood seasoning

Cook bacon in soup pot until crisp. Crumble bacon and set aside. Sauté onion in bacon grease. Add other ingredients (crumbled bacon last). Serve with oyster crackers or saltines. Serves 10.
